This isn't exactly quick, but it is pretty easy and it makes enough for us to have for 3 meals. And they are so yummy to eat. After they are cooked and cooled they can be placed in Ziplock bags and frozen for future use. They stay fresh longer if frozen with the sauce on them. Use within 2-3 months.
3 lbs ground beef
3 lbs ground pork
6 eggs slightly beaten
3 tsp garlic salt
6 tsp salt
3/4 tsp pepper
3 c. dry bread crumbs (I used stuffing mix and omitted the salt)
3/4 c. minced onion
1/2 c. Worcestershire sauce
Combine all ingredients and mix well. Using a rounded tablespoon, shape into 1 1/2 inch balls. Bake in 350 degree oven. (these shrink so you can place them very close together in order to fit more on the cookie sheet). Bake 15-20 minutes.
Serve plain or with one of the following sauces:
Sweet and Sour Meatballs
1/2 recipe basic meatballs
1/2 c. brown sugar
2 TBs cornstarch
1 c. water
1/4 tsp salt
1/2 c vinegar
1/4 c. ketchup
1/2 c. chunked onion
1 c. chuncked red and green pepper
Mix together. Heat to boiling. Reduce heat and stir until thick and bubbly. Add meatballs and simmer 15 min. Serve with hot rice.
Pineapple Meatballs
1/2 recipe basic meatballs
3/4 c. BBQ sauce
3/4 c. orange juice
1/2 c. brown sugar
2 T. cornstarch
1 can crushed pineapple
Arrange meatballs in greased baking dish. Mix remaining ingredients. Pour over meatballs. Bake covered for 45 min at 350 degrees. Serve with rice.

Fabulous Easy Pork Chops
Thanks to my mom who gave me this easy recipe. It seemed too simple to be as good as she claimed, but it truly tasted incredible.
4-5 pork chops
1-3 Tbsp soy sauce
2 tsp garlic
1/2 tsp paprika
1/2 tsp salt
1 tsp pepper
Douse chops with soy sauce. Mix spices and sprinkle on chops (rub in a little if you want). Let marinate for half an hour (or longer, but refrigerate). Grill 4 inches from heat for 5-6 minutes on each side.

Crockpot Carribbean Pork, also Rice and Beans
My friend Tricia made this for our ward's enrichment meeting, and I've made it for my family several times since. It's been a huge hit--I'm addicted to the rice. Beware, it makes a lot, so you'll have leftovers all week (I love that!), or you can freeze some meat for later.
Carribbean Sweet Pork
1 pork shoulder picnic roast, 4-6 lb
1 C soy sauce
1 C water
1 C brown sugar
1/4 C honey
1 Tbsp sesame oil
1 tsp fresh garlic, minced
1 tsp fresh ginger, grated
Roast meat in crock pot 6-7 hours on high until it falls apart. Look closely to pull out large pieces of fat, then shred with two forks. Mix remaining ingredients and add to meat, then cook for a few hours longer on low. (It may look like too much sauce, but as you shred the pork it will absorb it all back in. Ladle some off if desired.)

2 C uncooked rice
2 1/4 C water
1 can coconut milk (13 oz)
1 Tbsp salt (I use less)
1 can red kidney beans (drained)
Put all ingredients in pot or rice cooker and simmer until done. Makes 6 cups.
